I have been really into lemon flavor lately and was in the mood to make some sort of lemon pasta. I recently tried pearled couscous (or some people call it Israeli couscous) and thought it would be perfect to pair with lemon! This Lemon Asparagus Couscous is the perfect for lunch, dinner or as a side dish you bring to a party!
I cooked everything in my Always Pan that I am obsessed with! Going to link it here because it is too good! I made everything in this pan so the clean up was so easy.
Ingredients:
1 box of Pearled Couscous
1 bunch of Asparagus
Olive oil
1 TBSP Butter
3 Lemons
Salt & pepper
Directions:
Cut asparagus into 1 inch size pieces. Add a little olive oil to the pan and heat. Add asparagus and cook for about 10 minutes. Remove from pan
Add couscous and water to the pan (per the directions on the box) and cook couscous until tender.
Add olive oil, a tablespoon of butter and salt and pepper to taste
Add back in cooked asparagus
Squeeze two lemons and use the last lemon to make it look pretty lol
Garnish with parsley & parmesan cheese (optional)
